Margarines, yogurts, drinks... anti-cholesterol foods invaded the rays of the supermarkets. This asset health is bound to a family of particular compounds:  the phytostérols. But how walks this ingredient miracle?

The phytostérols is the plant compounds of which one can enrich some food. Consumed to the daily, they contribute to reduce the blood cholesterol.

  ..Phytostérols:  of the substances 100% plant

The phytostérols counts among the lipids (greases) present in the plant food:  oils, cereals, fruits and fresh vegetables, oleaginous fruits as the peanuts and the almonds. Several sorts, as the sitostérol, the campestérol, and the whole group of the stanols, exist. The stérols has some chemical structure very close to cholesterol, but they don't present the inconveniences of it for health. Cholesterol, as for it, concentrates in food of animal origin:  eggs, cut down, butter...

  ..To lower the blood cholesterol

The first survey having put the efficiency of the plant stérols forward on the reduction of the blood cholesterol dates 1953! Since, a good sixty scientific works demonstrated the interest of the phytostérols on the decrease of the total cholesterol, and especially of LDL-Cholesterol, the "bad", whose excess tends to plug the arteries. To be assimilated, cholesterol must integrate in "micelles", of the sorts of present carriers in the digestive cells. As the plant stérols looks a lot like cholesterol, if they are present in sufficient quantity in the digestive tube, they take the place of a part of cholesterol within the carriers. Result:  there is assimilated less cholesterol (the cholesterol that didn't take the carriers is evacuated in the stools). However the liver needs cholesterol to manufacture the biliary salts (that serve to the digestion). Without the contributions of the food, he/it is obliged to capture circulating LDL-Cholesterol in blood, what makes lower little by little the concentration. A daily consumption of plant stérols understood between 1 and 3 g permits to get a decrease of the LDL-Cholesterol of 5 to 15%, without reducing HDL-Cholesterol (the good protective cholesterol of the arteries).

  ..Where to find the phytostérols?

Food the more extracts in plant stérols are the oils of corn, colza, sunflower, soy, the sesame seeds, the cashew nuts, the almonds, the peanuts, the grains of corn, sorghum, wheat,,. The fruits and fresh vegetables also contain some in least proportion. However, to the total, our daily contribution doesn't pass 200 to 400 mg, it is well less that the efficient dose against cholesterol. If one has too much LDLs-Cholesterol, he/it is recommended (1) to integrate in his/her/its food of food enriched in phytostérols:  dairy specialties (returns of classic yogurts or to drink added of stérols) or margarines. To reach the efficient dose, 1,5 to 3 g of stérols per day, one can associate several products:

- 1 dairy specialty pot = 0,8 g of stérols.
- 1 dairy specialty bottle to drink = 1,6 g.
- 1 spoon to coffee of enriched margarine = 0,53 to 0,75 g.

According to the experts (2), it is useless to pass 3 g per day. Beyond, the LDL doesn't lower more.
