The nutrition is the discipline that studies food and their use by the organism. It is a key element of health:  some illnesses are bound directly to what one eats. The point on a science to the increasing importance.

  The importance of a good nutrition is not a new idea... Already 400 years before JC Hippocrate said that "the food was our first medicine", and according to the millennial Chinese medicine, food is also the remedies of which it imports to respect one very precise instructions for use to warn and even to treat the illnesses.

  ..Of the deficiencies and men

To the last century, one demonstrated the tie between the food deficiencies and the serious illnesses. These different shapes of the malnutrition remain problems of public health nowadays in the countries in development, as the blindness due to the deficiency in vitamin TO or cretinism due to the deficiency in iodine. However, it is long after the disappearance of the big nutritional deficiencies in Europe that is born the idea that outside of all malnutrition some illnesses could be bound to nutritional factors, and since the years 60, research on the ties between food and health made enormous progress.

  ..A problem of public health

He is now proven that the two bigger reasons of death in France - cardiovascular illnesses and cancers - are bound in our way to eat. One also knows that the food factors are associated to the intervening other very widespread illnesses by far as the diabetes, the osteoporosis or the obesity and that a "good" nutrition is a key factor for a "good" health. For example the athérosclérose, phenomenon of hardening of the partition of the arteries, sometimes begins early in life and can be stopped or even reversed if one limits the fatty acids saturated in the food. in the same way one can be predisposed genetically to the diabetes but ever to be touched by the illness if one maintains an acceptable weight. Finally one knows the importance to consume food fibers to decrease the risk of cancer of the colonist.

  ..Food and performance

But beyond the protective role or on the contrary "to risk" of some nutriments (blessed vitamins, cholesterol outlaw!), the notion of a better parking food of a better health made its path widely speaking. The role of food themselves and of the food behaviors on the physical and intellectual performances, on the resistance to the infections or in struggle against the ageing are admitted commonly. He/it is also clear that the only nutrition is not the unique pledge for a better health or for one life longer, but that it intervenes in complement of the regular practice of physical exercise, of the reduction of the consumption of tobacco and alcohol, of the stress control, of a limitation of the exhibition to the risks environmental and other factors of improvement of the life quality.
